Heat peanut oil in a heavy non-stick skillet or wok until very hot. Add the chicken, onion and garlic. Add the lemongrass, fish sauce, sugar substitute, coriander, and turmeric. Add the beans, broth, and oyster sauce.
Instructions to make Lemongrass Basil Pork Stew:
- Cut pork lean into 4x4cm or as preferenced.
- Crush garlic, shallots, galangal. Mix with turmeric powder, salt, and sugar.
- Heat cooking oil, sautee the herbs paste until fragrance. Put lemongrass and kaffir lime leaves in. Set aside and let it cool.
- Marinade the pork and rub with the paste. Put it in the fridge at least 1 hour.
- Heat the pan, sautee the marinated pork, add some water, and add Indonesian basil in. Next, bring to boil until it's cooked and a little bit dry.
- Tips: if you want it spicy, add some red chillies on the crushing process.
Scrap off the marinate from the pork and place the pork on the grill. I highly recommend to use meat thermometer. I used iGrill and regular meat thermometer, either one works perfect! Cut the pork into pieces, you can leave it in steak sizes piece, or cut it into thin strips, depending on how much you want the marinade to cover. Add sugar, minced garlic, minced shallot, chopped onion, and minced lemongrass to mini chop and blend into a fine texture.
