An authentic Mexican pork stew made with dried chiles, no chili powder here! The guajillo chiles add a very smoky flavor while the ancho chiles add a touch of smoky sweetness. To add another level of flavor, we always top our puerco asado with sliced onions marinated in fresh lemon juice.

Pork Stew is one of the most well liked of recent trending meals in the world. It is appreciated by millions daily. It’s easy, it is quick, it tastes delicious. Pork Stew is something that I have loved my whole life. They’re fine and they look wonderful.

To begin with this recipe, we have to first prepare a few components. You can have pork stew using 11 ingredients and 11 steps. Here is how you cook that.

The ingredients needed to make Pork Stew:
  1. Make ready 1 1/2 lb pork shoulder, cubed
  2. Take 2 tbsp flour
  3. Make ready 1 salt and pepper
  4. Take 2 tbsp vegetable oil (olive oil works)
  5. Prepare 4 cup water
  6. Take 1 cup beer
  7. Prepare 2 tbsp beef bullion
  8. Prepare 1 onion, chopped
  9. Make ready 3 potatoes, cut up
  10. Make ready 3 carrots, sliced
  11. Take 1/2 cabbage, quartered (optional)

In large bowl, mix pork cubes, flour and seasoned salt until pork is coated. The best cuts of meat for pork stew also happen to be the most affordable. Pork shoulder is a cut of meat that is great for cooking low and slow (it's the same cut of meat I use for pulled pork or green chili). Choose the cut of pork based on your cooking method.

Steps to make Pork Stew:
  1. Season the flour with salt and pepper and coat the meat (I do this in a large plastic zip-top bag)
  2. Heat oil in a Dutch oven over medium heat.
  3. Brown the meat for about 5 minutes.
  4. Remove the browned meat from the pot.
  5. Add onion and cook until it starts to go translucent.
  6. Add water and beer and stir, scraping the bottom of the pot as you go to release the tasty cooked-on bits. (You can use water only if you prefer).
  7. Add bullion, potato, carrot, and meat. Bring to a boil, then reduce the heat to medium low.
  8. Cover and simmer for about 1 hour, until meat and veg is tender and stew thickens.
  9. Season if necessary. If you're using salted bullion/stock, you probably won't need to add additional salt, so be sure to taste!
  10. Add the cabbage to the pot, cover, and summer for another 10 minutes, until the cabbage is tender. (Optional)
  11. Your stew should thicken from the meat's flour coating and the potatoes, but if it's too thin, dissolve a tablespoon of corn starch or flour in 2 tablespoons water and gradually add it to the stew. Cook, stirring frequently, until it thickens.

After sauteeing the onion and garlic w/ the pork I threw in the carrots potatoes and some mushrooms and sauteed it for a bit longer. Adjust seasoning with salt and pepper to taste. In a small bowl, whisk broth and tomato paste; pour over vegetables. Stir in pork, onions and garlic; cook until pork is browned. Stir in broth, vinegar, sugar, seasonings and vegetables.
