  1. Get 1 lb ground beef (or with half/half Italian sausage)

A saute of onion, garlic and ground beef is simmered with tomato and oregano, then layered in a slow cooker with raw lasagna noodles and a creamy blend of cottage cheese, Parmesan and mozzarella.   1. Start with meat sauce. Saute onions til translucent. Add meat, brown. Drain. Add garlic, continue to cook for 30 seconds. Add tomato sauce, simmer on low with lid askew for 2 hours.
  2. Meanwhile, mix ricotta, egg, parmesan, and 1/2 cup mozzarella.
  3. In Crock-Pot, add a thin layer of sauce to the bottom. Layer with noodles, ricotta mixture, meat sauce and mozzarella. Add another layer. Finish with noodles, sauce, and mozzarella.
  4. Cook low for 4 hours
  5. Tips: For chunkier sauce, add diced tomatoes last 30 mins of sauce simmering. For creamier cheese layer, add cream cheese to ricotta mixture.

Add a double layer of uncooked lasagna noodles (break to fit) and top with cheeses. Repeat with sauce, noodles and cheeses until all are used up. This crockpot lasagna is SO easy and is a meal that my whole family loves. Now don't get me wrong, it may not taste as authentic as a true classic Italian lasagna, but it's perfect for those busy nights when you know you won't have time to make dinner and want to throw something in the crockpot before the kids get home from school. In a skillet, cook beef and onion over medium heat until meat is no longer pink.
